Well-known for their amazing aroma, vanilla pods are a natural flavouring that can be used in both sweet and savoury dishes. Split the pod lengthwise and scrape the seeds out and into your dish. You can dry the husk and use it to make vanilla sugar. Just add to a sealed jar of sugar and used as needed.

Vanilla pods are the seed of an orchid, and is dark brown to black when cured. When fresh, vanilla pods should be able to bend and twist without snapping.
